A “saignée” style wine (juice drawn from tank before fementation or extended skin contact). The juice is then fermented in 100% stainless-steel drums and stirred on its lees for 6 months. The result is surprisingly dense and layered, without sacrificing the freshness and lift one would expect from a Rosé wine. The 2010 (55% Cabernet Sauvignon), exhibits ripe strawberry, melon and floral aromas, has a lively mouthfeel bright acidity and an exceptionally long finish. A brilliant compliment to grilled fish, oven-roasted turkey, fried chicken, cream or mushroom sauces or a variety of fine cheeses. Cellar aging our Rosé for 2-4 years can yield spectacular results, given the structure of the wine.
